I came across some black bass that was  about to go bad within a few days. It was a warm day and the dish happen to fit people’s pallet across the board.

 Our dish this time is:

Baked (or pan roasted) Black bass with roasted asparagus, potatoes, and spinach. If you like sauce a burre blanc or horseradish cream would be good with the fish.
Roasted asparagus is simple: put a baking shit at 375 degrees with oil salt and black pepper. Roast for 10 mins (there will be color on them).
Potato with spinach, Small or whatever size potato you like until there’s color, add 3 cloves of minced garlic and 3 tablespoon of minced shallot or white onion. Once they have color, add spinach and saute until the spinach is wilted.
In the picture there two 3 once piece but one 6-8 is more than enough for one person
